Repeat this process for the remaining pieces. 4. Drain any excess oil into a small bowl and reserve, leaving just enough in the wok. Add the bell pepper pieces and quickly stir-fry for several flips before setting aside in another bowl.

  5. Wipe out the wok with some oil and heat it up again until slightly hot. Add the corn kernels, stir-fry a few times, then add half a bowl of water. Cover and simmer until the water is dry. Once done, pour in the stir-fried bell peppers, season with an appropriate amount of salt, mix well, and transfer to a large serving bowl.

  6. Spoon the cooked pepper and corn mixture onto the fried eggplant pieces on the plate, leaving a small gap at the neck for decoration with some chopped green onions if desired. This makes a colorful dish that is fragrant and delicious.
