How to Make Sweet and Sour Fish Slices

Sweet and sour sugar Vinegar Fish slices can win over a group of children who don't like fish! Crunchy exterior, tender fish meat, sweet and sour to taste. It is both appetizing and nutritious in summer.

Sweet and sour fish preparation method
1. Remove the head, tail, and spine from the Chinese perch. Then slice it into thin pieces.

2. Add egg, Shaoxing wine, ginger, and salt to the fish slices, mix well, and marinate for half an hour.

3. After marination, ensure each piece of fish is evenly coated with cornstarch.

4. Fry the fish pieces in hot oil until the starch forms; then remove them. Increase the heat and fry the fish pieces again until golden yellow before removing (re-frying makes the fish slices less likely to fall apart).

5. In a little remaining oil, add ketchup, vinegar, and sugar, mix well, and add a bit of water and cornstarch slurry. Stir in the fish pieces evenly, then sprinkle with white sesame seeds before serving.

Chinese perch is chosen because it has few bones; almost none are present except for one central bone.
