Ingredients
700g sugar, 700g cake flour, 25g quats powder.
Method
1. Mix the sugar, cake flour, and quats powder on a working surface and knead until smooth, then sift through a sieve to create cake flour;
2. Place a pot with a 35×36 cm diameter frame, fill the pot with the sifted cake flour, knead with your hands, then use a metal comb to smooth it out, and gently press with a copper press (do not press too tightly) to form 5×9 cm long square blocks;
