How to Make Shaoxing Chicken

Huadiao is a traditional Chinese liquor, belonging to the yellow rice wine category. The most famous Huadiao is from Shaoxing, which is rich in nutrients, has a unique flavor, and is beneficial to the human body. Huadiao is also an important seasoning in the kitchen, with multiple functions such as removing fishy smell and enhancing fragrance. In some Huadiao chicken dishes, a bottle of Huadiao wine is often used.

Ingredients Preparation

Method steps
1. Wash and pat dry half a chicken, then marinate with light soy sauce and let it dry.

Ingredient preparation
Ginger slices 2 cups, 3 tablespoons of fragrant oil, appropriate amount of vegetable oil, 1 bottle of aged Huadiao wine, 1 chicken, 1 bottle of beer.Soy sauce 6 tablespoons, 2 tablespoons of rock sugar, a pinch of salt.
Method steps
1. Wash and cut the chicken, marinate with beer for 10 minutes.
2. Mix soy sauce, rock sugar, and salt in a small bowl and set aside. Cut ginger slices and set aside.
3. Heat fragrant oil and vegetable oil in a frying pan, dry-fry ginger slices over medium heat until they are shriveled.
4. Then increase the heat to high, pour in the marinated chicken, stir-fry until the chicken meat is cooked through.
5. Then remove excess water and oil, stir-fry for about 30 minutes, then add the pre-mixed sauce.
6. After frying until colored, pour in one bottle of Huadiao wine, slowly simmer and reduce the sauce to 80%, then serve.
Tips
Do not stir-fry immediately after adding the wine, but simmer slowly, and the sauce should be thick at the end.
