Cut off the claws and trim the nails, then chop into bite-sized pieces and blanch in water to clean.2. Add a slice of ginger to the pot with the water from braising the chicken feet, and cook for about 20 minutes, then remove. Marinate in old soy sauce and light soy sauce. 3. Cut 2 slices of ginger, cut the dried chili into segments, and chop the scallions for later use.
4. Heat oil in the pot, stir-fry ginger slices, dried chili, and scallions, then add the chicken feet and stir-fry.
5. Add a little water and light soy sauce, then add sugar and white pepper, and add a bowl of water to simmer.
6. Continue to simmer the chicken feet until they are soft and tender, then add the remaining scallions and mix well before serving.
Quick Braised Chicken Feet Recipe
Ingredients

Secret Braised Chicken Feet Recipe
Ingredients
750g of chicken feet,
Sichuan peppercorns,
2 star anise,

2 cinnamon sticks, 2 bay leaves, 10g of rock sugar, 1 tablespoon of rice wine, 3 tablespoons of old soy sauce, 1/2 teaspoon of thirteen spice, 2 tablespoons of light soy sauce, 2 slices of ginger.
Method Steps 1. Wash the chicken feet, remove the claws, and put them in a pot with water. Cook until boiling, then simmer for 3 minutes. 2. Remove the chicken feet and rinse them thoroughly with running water, then drain.3. Put the chicken feet in a pot, add water to cover, and bring to a boil. Then add rice wine, ginger slices, old soy sauce, and light soy sauce. 4. Add Sichuan peppercorns, star anise, cinnamon sticks, and bay leaves in a bag, then add rock sugar and thirteen spice and cook until boiling.
5. Reduce the heat to low and simmer for about 80 minutes, until the chicken feet are cooked through and flavorful. Then turn up the heat to thicken the sauce.
Tips
When blanching the chicken feet, do not cover the pot. Most people do not need to add salt.
Add chicken feet to the pot, cover with water, and bring to a boil.
Add peppercorns, star anise, cinnamon, and bay leaves in a spice bag. Add sugar and thirteen spices.
Reduce heat to low and simmer for 80 minutes, or until the chicken feet are tender and flavorful.
