Ingredients

1. Peel and slice the eggplant, chop the bell pepper, slice the green onion, and mince the garlic.
2. In a small bowl, mix vegetable oil, old soy sauce, rice vinegar, water, salt, sugar, MSG, and cornstarch.
3. Heat vegetable oil in a wok until 7 parts are cooked. Add the eggplant and fry until golden brown, then remove.
4. Add minced green onions and garlic to the remaining oil and stir-fry until fragrant. Add the eggplant and bell pepper and stir-fry for 20 seconds.
5. Pour the prepared sauce into the wok and stir-fry until it thickens. Add minced garlic just before serving.

1. Wash and slice the eggplant, salt and marinate for 15 minutes, wash and drain.
2. Chop the long beans and soak in salted water for 1 minute, then drain. Chop the garlic, green onion, ginger and dried chili peppers into small pieces. Mix oyster sauce, light soy sauce, sugar, and salt with a little cold water to make a sauce.
3. Heat vegetable oil in a wok and add green onions, ginger, garlic, and dried chili peppers.
4. Add eggplant and long beans and stir-fry over medium heat until the long beans are cooked. Add the sauce and stir-fry until evenly mixed.
Eggplant with Minced Meat Sauce
Ingredients:

Eggplant,
pork green onions, ginger, garlic, mung beans soy sauceand mustard, yellow wine, sugar, vegetable oil, cornstarch.
Instructions:
1. Wash and slice the eggplant, chop the pork into minced meat, and chop the green onions, ginger.
2. Heat vegetable oil in a wok and fry the eggplant until golden brown, then add the minced pork and stir-fry with yellow wine, minced green onions, ginger, garlic, and mustard.
3. Add soy sauce to color, then add the eggplant and stir-fry. Add water as needed, and thicken with cornstarch when it boils.
