Homemade Recipe for Chrysanthemum Pastry

1. Sift 200 grams of flour into a bowl, add 30 grams of refined sugar, 80 grams of rendered lard, and 55 grams of water, knead until it becomes smooth dough, cover with cling film and let rest for about 20 minutes.
2. Sift another 120 grams of flour into a bowl, add 60 grams of rendered lard, mix to form a ball, cover with cling film and let rest for about 20 minutes.
3. For the water-oil dough, cut it into 16 equal parts; do the same for the fat-skin and the red bean paste.
Steps:
1. Divide the rested water-oil dough and fat-skin equally into 16 pieces each, also divide the red bean paste into 16 portions.
2. Take one piece of water-oil dough, flatten it with your palm, place a piece of fat-skin on top, seal by folding, press flat, roll out three times (the more you fold, the better the flakiness; but do not roll out fully at the last fold).
3. Repeat step 2 for all pieces to form chrysanthemum pastry bases.
4. Flatten one chrysanthemum pastry base with your palm, lightly press it out a little, then use a rolling pin to slightly stretch it into a circular shape, cut around the circle into 12 sections with scissors, these are the 12 petals of the chrysanthemum.5. Gently twist each petal by 45 degrees, allowing the red bean paste inside to show through; brush the center with egg yolk liquid and sprinkle some black and white sesame seeds on top. This completes the shaping of the chrysanthemum pastries. 6. Repeat step 5 for all chrysanthemum pastry bases.
