Homemade Black Rice Cake Recipe


Only a few simple ingredients are needed.These ingredients can create delicious and soft black rice flour cake. The process is somewhat like making sponge cake.Mainly, it relies on whipping the whole eggs and white sugar with an electric mixer.Then sift in the dry ingredients and fold them evenly. Pour the mixture into a cake mold and steam for 35 minutes before letting it sit for another 15 minutes.The main ingredients are: 75g black rice flour, 4 eggs, 75g white sugar, 3g baking powder without aluminum. Step 1. Grind 85g of black rice into a fine powder.Step 2. Prepare all the materials. Step 3. Place 4 whole eggs and 75g of white sugar in a bowl; prepare another bowl with warm water to keep the first bowl warm, which helps in whipping the eggs.Preheat the steamer to 100 degrees Celsius. If you don't have a steamer, use a boiling pot instead.
Step 4. Whisk the whole eggs until the color lightens and the mixture forms peaks that do not immediately drop when the whisk is lifted.Step 5. Sift in all dry ingredients: black rice flour, glutinous rice flour, low-flour, and baking powder.Step 6. Quickly fold these together with a spatula until no dry spots remain.Step 7. Pour the mixture into a mold; it's best to use a living bottom cake mold for easy demolding.Step 8. Cover the mold with a cling film. Step 9. Place in the middle layer of the steamer and set for strong steam mode, steam for 35 minutes, then let sit for another 15 minutes before opening.(For those without a steamer, use a large pot to boil water for 30 minutes, then let it rest for 15 more minutes. Step 10. Remove and enjoy the cake!
Step 11. Demold and admire your creation.

Tip: Over-whipping whole eggs can cause the black rice cake to not rise properly or become too dense.

Make sure to whip just enough to ensure plenty of air, but avoid overdoing it.

Simultaneously, turn on the steamer to set it to rice heating mode and preheat to 100 degrees.(If you don't have a steamer, bring water to a boil in a steaming pot!)

Whip all the eggs using an electric mixer until the egg mixture lightens in color and forms stiff peaks that do not quickly fall when the whisk is lifted, with traces of the whip marks lasting for a while.

Pour in all the dry ingredients;(Black rice flour,rice flour, low-flour, baking powder)

Mix thoroughly using a spatula by lifting and folding quickly until there are no lumps.

Pour into the mold;(It's best to use a non-stick cake pan for easy demolding)

Cover with a layer of plastic wrap;

Place the mold in the middle level of the steamer, set it to high steam mode, and steam for 35 minutes. Once done, let it sit for an additional 15 minutes before opening.(If you don't have a steamer, directly steam for 30 minutes using a steaming pot, then let it sit for 15 minutes.)
