Homestyle Sand Pot Vegetarian Stewed Noodles Method


Stewed noodles is a traditional specialty in central and northern China.It is a type of noodle dish.It is also a popular snack. Popular in Shanxi, Shaanxi, Henan, Hebei, Beijing, Tianjin, Inner Mongolia, Liaoning, Anhui, Hubei, and other areas north of the Yangtze River, it is also known as Steamed noodles, stewed noodles,oven-stewed noodles, loumian (a type of stewed noodle), cooked noodles,flour, mixed with mainly cabbage,Chinese long beans, and pork.Other ingredients can be added according to personal preference. Mushrooms, dried mushrooms, potatoes,can also be added, making it nutritious and healthful!,The main ingredient is,flour, while the main additives are a clay pot. I used daikon radish,,onion,,and Chinese cabbage today,making it delicious and healthy! Ingredients:
Main ingredients: noodles - 100g,carrot - 10g, onion - 10g,Chinese cabbage - 10g, oil - as needed,half a spoon of salt, quarter spoon of monosodium glutamate (MSG),2 spoons of light soy sauce, half a spoon of dark soy sauce,1 piece of rock sugar, chopped green onions - as needed,
ginger - 2 pieces.

Step 1: Clean the onion, carrot, and Chinese cabbage thoroughly.

Step 2: Cut the onion into chunks, slice the carrot into rhombus-shaped pieces, and reserve the stems of the Chinese cabbage.Several star anise pieces are needed.

Step 3: Chop the green onions diagonally and ginger into two pieces.

Step 4: Make homemade noodles by kneading the dough, letting it rest, dividing it, stretching it into strips, and cooking it until half-cooked. Drain the cooked noodles after boiling for a short time because they will be stewed later.

Step 5: Heat a wok over low heat and add an appropriate amount of oil.

Step 6: Add star anise and ginger pieces to stir-fry until fragrant.

Step 7: Add the green onions and stir-fry until fragrant.

Step 8: Add the carrot and stir-fry for a while.

Step 9: Add the onion and stir-fry for a while.

Step 10: Add salt, MSG, rock sugar, light soy sauce, and dark soy sauce.

Step 11: Stir until well combined.

Step 12: Add an appropriate amount of water.Step 13: Transfer the half-cooked noodles into a clay pot.

Step 14: Cover and bring to a boil, then reduce heat for stewing.

Step 15: After 5 minutes, uncover the pot, flip the noodles, cover again, and continue stewing for another 5 minutes.

Step 16: Uncover the pot, add the stems of Chinese cabbage, stir with a fork until evenly distributed.

Tip:
The noodles are homemade, so make sure to knead them well. This will result in tender and delicious noodles. However, you can use an iron wok or other cookware instead if preferred; I prefer the taste and feel of using a clay pot!
The noodles are hand-stretched, with the dough needing to be firm and elastic. This results in noodles that are chewy and satisfying. Of course, you can also use a wok or other cookware to simmer them; I prefer the feel and taste of using a clay pot!
