Homemade Rumraisin Coconut Cookie Recipe

Steps

Gradually add low-gluten flour and knead into dough. Let it rest for half an hour.

Roll the dough out into a long rectangle (as shown).

Brush a thin layer of egg wash on top, arrange the chilled coconut filling in a rectangular shape (as shown) and place them neatly.

Wrap the edges with the outer layer, cover with plastic wrap and freeze for one hour.

Freeze-hardened dough should be taken out and cut into 0.5cm thickness using a knife.

Arrange on baking tray.
