Homemade Jiaozi with Leek and Lotus Root


Parents are particularly fond of dumplings. They can eat them up to twice a week now. Every time we go back home, Mom often makes these pork and lotus root dumplings,adding a small amount oflotus root and spring onion. We all like this taste very much, it's one of Mom's favorite filling varieties too. The crisp and tender lotus root combines with the special freshness of spring onions,
making a really nice flavor. Ingredients Main ingredients: 200g green onion, 500g lotus root, 350g pork, 500g flour, an appropriate amount of scallions,an appropriate amount of ginger, an appropriate amount of salt, an appropriate amount of cooking oil, an appropriate amount of sesame oil, an appropriate amount of old soy sauce,appropriate amount of light soy sauce, and an appropriate amount of oyster sauce.
Steps

1. Mix the flour with an appropriate amount of water to form a slightly soft dough. Knead again after ten minutes for smoother and softer dough. Cover with plastic wrap and let it rest for at least half an hour, or even longer for better use.

2. Prepare the filling. Cut the pork into small pieces and gently simmer them a bit. Add chopped scallions, ginger, old soy sauce, light soy sauce, oyster sauce, mix well and marinate for a while.

3. Wash the green onions and drain the water.

Peel and wash the lotus root.

4. Chop the lotus root into small pieces and simmer it until tender.

5. Add the cooked lotus root to the meat filling and add an appropriate amount of salt.

6. Mix the lotus root with the meat filling well.

7. Chop the green onions.

8. Add chopped green onions to the meat filling and mix in an appropriate amount of cooking oil.

9. Then add some sesame oil.

10. Mix all ingredients thoroughly.11. Roll the dough into a long strip, cut it into small pieces and shape them into rounds. Then flatten them to make

dumpling wrappers. Wrap them with filling.

12. Shape each dumpling individually.
