Mibababa is a famous snack in Wuhan.It mainly uses rice as the main ingredient. Rice is ground into flour, fermented, and then pan-fried to create this delicious dish.Mibababa has a golden yellow exterior, with an outer layer that is crispy while the inside remains tender, and it also carries a subtle alcoholic aroma. This delicacy is beloved by many due to its unique characteristics.
I still remember when my mother often made it during childhood, using charcoal on a wok for cooking, which gave a richer flavor.Mibababa was harder to come by in big cities because of the inconvenience of grinding rice, so we could only get them through buying or eating at restaurants. In Beijing, opportunities to enjoy this snack are even rarer, except during the Spring Festival when I return home and have the chance to taste it at a restaurant outside.
Starting last year, I began trying to make Mibababa myself at home.Initially, without a blender for grinding the rice flour or paste, the texture was slightly less ideal. As I gained more experience with a blender and its grinding function, making it became much easier.

Ingredients: 260g of rice, 2g of yeast, 20g of sugar, and 200g of water. 1. Put the rice in the blender cup (rinse the rice with water before grinding if you prefer).2. Plug in the blender and choose the grinding function. 3. After about 50 seconds, the rice turns into flour.
4. Transfer the rice flour to a mixing bowl.
5. Add sugar, yeast, and water, mix well.

6. Cover with cling film or lid and let it ferment until the surface of the batter has many holes and a mild alcohol aroma is present.

7. Heat a non-stick pan over electric stove.


8. Using a spoon, pour some of the batter onto the pan, spreading it into a circle shape; as the batter solidifies, air bubbles will form on the surface.

7. When the bottom turns golden brown, flip to fry the other side until both sides are golden brown before removing from the pan.
