Homemade Scallion Cookie Biscuit Recipe


Ingredients:Butter 65 grams/Sugar powder 42 grams/Salt 3 grams/Corn oil Water 45 grams/Cilantro 15 grams/Low-gluten Flour 180 grams
Baking:Oven Middle rack, top heat 160°C, bottom heat 130°C, for 20 minutes (adjust according to your oven)

1 Make Biscuits First soften the butter until you can poke a hole in it with your finger. The ideal state is when you can easily make a hole; at home, the temperature was 18 degrees and the butter couldn't be softened to its best beating condition, so refer to my picture where though I could poke a hole, it still required some force, indicating that the butter isn't easy to beat in this state.
2 Heat the butter with warm water. Observe the butter's state; when you see some of it has melted but most is still solid, take the butter out of the hot water.
3 Use a chopstick to stir and scatter the solid butter into the liquid butter, making it easier to beat at this point.

4 Add sugar powder and salt.
5 Beat the butter until its color lightens and becomes fluffy.
6 Add corn oil.

7 Stir evenly.
8 Add water.
9 Stir evenly.

10 Add cilantro, mix well.
11 Sift in low-gluten flour.
12 Use a spatula to mix until no dry powder remains.
13 Pipe into desired shapes and bake in the oven. You can also place a bit of
sesame on top of the cookies.Cilantro Cookies

Tips:1 Cookies can be piped into various shapes based on personal preference. 2 Cut cilantro finely.
