Yogurt Braised Yam Sponge Cake



Ingredients:Eggs 2 pieces,Steam Until cooked Purple yam 45 grams,Yogurt 42 grams, 33 grams of fine sugar,Corn Oil 15 grams, 38 grams of low-gluten flour

Purple yam is mashed and mixed with yogurt. Add Egg yolks and 13 grams of fine sugar, mix well. Add corn oil, mix well. Sift in low-gluten flour, mix into a uniform batter, set aside.

Egg whites Be whipped to coarse foam, add the remaining sugar in three parts and whip. Form stiff peaks. Take one-third of the egg white to the batter and mix well. Return to the egg whites, mix well.

Pour into a six-inch springform pan. Level the surface. Put in oven, lower shelf, 135°C, bake for about 40 minutes. Remove from oven immediately and invert to cool, then flip over. Demold.

It is soft yet with some small purple yam granules...
