Stir-fry the sliced sweet potatoes over high heat for about 15 minutes.
Remove the sweet potatoes from the pot to cool down and drain off excess water from the bowl.

Add the beaten egg to the sweet potato paste.

Continue mixing until well combined.

Add rice flour and glutinous rice starch.

Take a small piece of the dough, knead into a ball, and flatten it by pressing on your palm. If the dough is not too sticky and does not crack at the edges after being flattened, its softness is appropriate.

Place some shredded mozzarella cheese on the flattened dough.

Wrap up and seal well to form a round dough ball.Press the dough ball into a circular shape. Brush the surface of the dough with water for stickiness.

Roll it in bread crumbs until evenly coated.

You can make 18 small buns, but I couldn't finish them all, so I made 12. The remaining dough was put in the refrigerator for another time.

Heat an unstick pan and pour a bit of salad oil into it.

Place the small round buns in the pan and cook over low heat on one side until golden brown.

Flip to cook the other side until golden brown as well, then remove from the pan.
