1. Finished product picture.
2. Bought rice noodles online.3. Soaked one sheet of rice noodle in a bowl with cold water. 4. The cold water should cover the rice noodle completely (I soaked it before going to bed around 10 PM).
5. Rice noodles are already softened after soaking overnight.
6. Drain and dry the rice noodles.

7. Clean some greens and drain them.

8. Cut appropriate amount of lean meat into strips, chop two green onions into pieces, and prepare two eggs.

9. Heat a pot with an appropriate amount of oil.

10. Fry the two eggs in the oil until they are cooked, then stir-fry them.11. Add meat strips to the fried eggs and continue stir-frying for a few seconds. 12. Add greens and stir-fry together (add chili peppers if you like spicy food).

13. Stir-fry with drained rice noodles until well mixed (continuously break up any clumps of noodles using the spatula).

14. Season with salt and soy sauce, then continue stir-frying while breaking up the noodles.

15. Quickly stir-fry until evenly colored before adding green onions at the end.16. Serve in a dish (one sheet of rice noodle makes two servings). Tips:

If you have time, soak the rice noodles for several hours beforehand; if rushed, quickly soften them with hot water and then rinse under cold water before draining.

Ensure all ingredients are well drained to prevent sticky consistency when stir-fried.

Continuously use a spatula to break up the noodles while cooking.

If you like spicy food, add various types of chili peppers according to your taste preferences.I mostly cook for my son now and have almost stopped eating spicy food as a result.)

Reheat the drained rice noodles and stir-fry them together (stir continuously while breaking up any lumps to prevent sticking).

Stir-fry for a few seconds until the noodles are soft, then add an appropriate amount of salt and soy sauce (use more soy sauce for color enhancement; as it is salty, use less salt. Sprinkle the salt evenly over the noodles rather than dumping it in one place to ensure even distribution).

Rapidly stir-fry until the color is uniform, then add chopped green onions before stirring again.

Transfer to a plate (1 piece of noodle was used for two servings).

1Tips:
1. For those with time, soak the rice noodles in water for several hours; if rushed, use hot water to soften them, rinse quickly under cold water, and drain thoroughly.
Rice noodles and vegetables must be well-drained; dry stir-frying is key for a good texture.
Always break up the noodles continuously while stirring.
Those who prefer spicy food can add various types of chili (chopped chili peppers, pickled chilies, oil-soaked chilies, dried red pepper shells), according to personal taste. Haha, I hardly eat chili now as I mostly cook for my son.
