Cantonese braised duck preparation:
1. Blanch the Chinese cabbage in boiling water and set aside. Clean the duck legs, remove the bones, and cut the potatoes into large pieces.
2. Add a little oil to a wok and fry the duck meat until both sides are golden brown, then remove and dice it.
3. In the same wok with some oil left, add scallions, ginger, star anise, and stir-fry for a moment before adding the Cantonese braised sauce and frying until well mixed. Then add cooking wine, a little sugar, soy sauce, and water.Stir and bring to a boil, then switch to low heat and simmer for 20 minutes.
4. After 20 minutes, add the potato pieces and continue simmering until the potatoes are soft and tender. Thicken the sauce if necessary, season with monosodium glutamate, and serve immediately.
