How to make small hotpot with pickled vegetables in Chongqing style?

The soup base ingredients for Chongqing Maocai: 150 grams of Chongqing hotpot base material,and alcohol. Add green onions, star anise,ginger, garlic.

Seasonings: salt, 2 tablespoons of starch, oil,millet wine.

The steps for making Chongqing Maocai:

Prepare the pig's kidney flower and old meat slices: for the pig's kidney flower: remove the outer membrane and inner white film. Cut into a crosshatch pattern, rinse with clear water for a moment, add a small amount of cooking vinegar,and soak for 15 minutes. Drain the excess moisture, add 1 tablespoon of starch and 2 tablespoons of edible oil, mix well.
