During the Chinese New Year, people usually eat dumplings. Why is the Chinese dumpling called a Dumpling in English? It's because Chinese dumplings are similar to food called Dumplings in American Southern cuisine; thus, they are also called Dumplings. What do American Dumplings look like?

To make Chicken and Dumplings, you need

4-5 chicken thighs with bones

2 small onions

2-3 celery sticks radishes

one celery stalks

6 cups chicken broth as a base

1/4 cup sherry, Shaoxing wine or apple juice 1/4 cup parsley (can be substituted with coriander)

and 2 tablespoons soybean oil Makes the dumplings:)

4 big spoons of butter 3/4 cup buttermilk (can be replaced with

milk and yogurt in a 1:1 ratio.Milk too much will be too thin.

Yogurt too much will be too thick)1 egg white 1 teaspoon sugar 1 teaspoon salt and half a teaspoon baking sodaFirst, cut the carrots, onions and celery into small pieces. Then season the chicken thighs and wings with salt and pepper.

In a large pot, heat up some oil on medium-high heat.

Place the chicken thighs in the pot with the skin side down.

Fry until the skin starts to become crispy.

This will take about 5-7 minutes.

Flip them over and fry for another minute or so.Set aside the cooked chicken. Drain out around 80% of the oil from the pot.

Add the carrots, onions and celery into the same pot.Fry on medium-high heat until they become slightly thickened. Then add in the wine, broth, chicken thighs and wings. Bring to a boil.Reduce the heat and simmer for about 50 minutes.

When done, remove the skin and bones from the chicken pieces.

Let the soup cool down and skim off the fat on top. Place the chicken back in the broth.

Mix flour, sugar, salt and baking soda in a bowl.
