How to make coral broad bean soup
1. Cut the bacon into pieces, rinse the broad beans, drain and set aside. Remove the seeds from the yellow winter squash, slice the onion, tomato and Carrot into small dice.
2. Heat a pot over high heat, fry the bacon in it (no oil needed, the bacon will release its own fat), add the onion dice to fry until softened, then add carrot dice and fry for 1 minute. Next, add the winter squash dice and stir-fry evenly, then add sage and thyme and stir-fry for about 1 minute more. Finally, add the broad beans and tomato dice, and pour in 4 small cups of cold water. Simmer over low heat for 15 minutes.
