How to Make Mango Soft Ice Cream

Prepare the ice cream. After making it, I only froze it for half an hour; soft and paired with fresh fruits and bread, an elegant afternoon tea immediately appeared! It can satisfy your cravings without upsetting your stomach.
I had a bottle of mango concentrate at hand,mango, which could add aroma and sweetness, so there was no need for fresh mangoes; very convenient.

Ingredients:Egg yolks one sugar 15 grams milk 100 grams concentrated mango juice 35 grams whipped cream 60 grams Oreo cookies 20 grams

Mango Soft Ice Cream Steps:
1. Place the ice cream container in the freezer for about 24 hours before assembling.
2. Mix egg yolks with sugar until the sugar melts.
3. Heat milk to around 40 degrees, gradually mix it into the egg yolk mixture while stirring.

4. Continue mixing and heat over low fire until the liquid has a thick consistency.
5. Add concentrated lemon juice.
6. Whip the cream to form patterns.

7. Mix the egg yolk mixture with the whipped cream thoroughly, then refrigerate for 1-2 hours.
8. Place the ice cream container in the bread machine and set it to IMIX mode; pour the liquid slowly and repeatedly into the bucket.
9. Stir for 20 minutes until the volume increases and a creamy texture is achieved. Transfer the ice cream mixture to a container, sprinkle with chopped Oreos,cookies, and mix evenly before refrigerating for storage.

Cooking Tip
1. The longer you freeze the ice cream bucket, the better; shorter times do not help in forming the ice cream.
2. When adding milk to the egg yolks, stir continuously as you pour to prevent curdling.
3. The liquid should be refrigerated before use for faster freezing. If one program does not yield satisfactory results, an additional IMIX program can be used.
4. Remove the Oreo cookie centers.
Ice Cream Process:
1. After running a program, pour out some of the mixture and allow it to stir for a few minutes before adding the rest; this helps form solid ice cream faster, using pause if necessary.

2. If the mixture is still too thin after one program, add another.
3. Using two programs for 40 minutes resulted in an excellent final product with a creamy texture and satisfied my expectations.

I placed a small piece of bread on a plate to avoid eating very cold ice cream; I froze it for only half an hour then used the ice cream scoop to create three balls, topped them with abundant fruits, decorated with Oreos. This afternoon tea felt like a gourmet dessert from a pastry shop and was much enjoyed. With the warm sun in the balcony, reading a cookbook and occasionally tasting this soft ice cream with bread made for a delightful afternoon.
