Egg(1 piece) Cornstarch
Flour Sichuan
Doubanjiang Sauce(1 tablespoon) Scallion
Cinnamon Garlic 1 teaspoon of dark soy sauce Aromatic
Malt vinegar(3 spoons) Shaoxing wine

How to Cook Flavorful Cod Pieces:

1. Wash two cod pieces and cut them into segments, add Shaoxing wine, salt, a little curry powder for marination for half an hour.

2. Beat the egg, mix 1:1 flour and cornstarch into a batter

3. Dip the marinated cod in the batter to coat each piece evenly

4. When the oil is about seven-tenths hot, fry the fish pieces on low heat, turning frequently.

5. Fry until golden brown, then remove.

6. Heat the oil back to eight-tenths hot, fry again briefly.

7. In a wok with leftover oil, stir-fry Sichuan Doubanjiang over low heat until fragrant.

8. Mix dark soy sauce, vinegar, scallions, ginger, garlic, salt, sugar, and a little water into a pan sauce, pour it in.

9. Add the fried cod pieces and stir-fry, thicken with water starch, then finish cooking over high heat.
