1. Rinse the fish belly and place it in a container, then add salt and malt vinegar. Rub vigorously until clean, let sit for 20 minutes before rinsing again.
2. Boil water in a pot, once boiling, add the fish belly and blanch.
3. After blanching, cool under running water to remove foam from the surface.
4. Cut the blanched fish belly into slices.
5. Heat oil in a wok until 70% hot, then add garlic and ginger strips and stir-fry until fragrant.
6. Add the fish belly slices and stir-fry over high heat.
7. Pour the prepared seasoning sauce into the pan.
8. Add coriander stems and red pepper strips for one last stir-fry.
9. Just before serving, drizzle with sesame oil.
Tips
1. Thoroughly clean fresh fish belly by rinsing both inside and out, rubbing with salt and malt vinegar to better remove impurities and mucus.
2. After blanching, cool the fish belly under running water for a crispier texture when eaten.
3. Prepare all seasonings before stir-frying as this is a quick dish that requires high heat cooking in one continuous action.
