How to Make Flavorful Cod Blocks:

1. Wash the cod and cut into pieces, then marinate with cooking wine, salt, and a little curry powder for half an hour.

2. Beat the egg and mix in equal parts flour and cornstarch to make a batter

3. Dip the marinated cod in the batter so that each piece is coated

4. Fry the cod pieces at seven-tenths heat, turning frequently

5. Once golden brown, remove from the pot.

6. Increase the oil temperature to eight-tenths and fry again briefly

7. In a little remaining oil, stir-fry the Pixian Doubanjiang over low heat until fragrant

8. Mix together light-soy sauce, vinegar, green onion, ginger, garlic, salt, sugar, and a small amount of water in a bowl

9. Add the fried cod pieces, toss well, pour in the slurry, and cook on high heat to thicken the sauce before serving.
