Fermented Tofu Peanut Soup with Pig's Feet

Ingredients
Pork knuckles front part2 pieces
Rose fermented black beans5 large pieces
millet peanuts rice4 handfuls
scallion1 stalk
ginger1 piece
Rice winehalf a bowl
candied sugara small handful
old soy sauce5 tablespoons
vinegar1 tablespoon
star anise2 pieces
bay leaf2 pieces
sesame seedsa little
dry chili 3 piecessesame oil
appropriate amountRose fermented black bean and peanut stewed pork knuckles
1. Have each piece of pork knuckle cut into four by the merchant, clean them and boil in cold water to remove blood and foam. Rinse with hot water again and thoroughly clean any remaining hair, then dry and set aside.2. Place plenty of oil in a pot, add pork knuckles and fry over low heat until the skin turns white. Add scallion pieces and ginger chunks, and sauté with sugar to get the color. 3. Pour rice wine, immediately cover the pot to let it evaporate for 2 minutes to remove miscellaneous flavors.

4. Add all ingredients except salt and sesame oil, stir-fry evenly until well colored, then add enough hot water to submerge all ingredients (the water can be a little higher than the ingredients).5. Bring to a boil over high heat, then reduce to low heat and simmer for 1.5 hours. Add salt, continue cooking for another 15 minutes until the sauce thickens, then add sesame oil to enhance flavor before turning off the fire. Tip

1. The water should be slightly more than enough, do not add water in the middle of cooking.

2. If there is too much sauce left at the end and you prefer a firmer texture for peanuts, add them in the last 30 minutes.3. Using spicy fermented black beans will give another flavor profile. Boil for two minutes to remove any off-flavors.

4. Pour in all ingredients except salt and sesame oil, stir-fry until well-colored, and add hot water to cover all ingredients (the water can be a little higher than the ingredients), and then Bring to a boil, reduce heat to simmer for 1.5 hours, add salt, continue simmering for another 15 minutes or so until the broth thickens and dries up, then add sesame oil to enhance flavor before turning off the heat.

Tips

1. It's better to have a little more water when simmering; do not add water in the middle. If there is still too much broth at the end, increase the heat and simmer without a lid until it dries up.
2. If you prefer slightly harder peanuts, add them in the last half hour.
3. Using fermented black beans instead gives a different flavor.
