Pearl Glutinous Rice Balls

Ingredients:

　　Pork belly 400g

　　Rice dumplings 50g

Appropriate amount of oil

Appropriate amount of salt

　　Lotus root Appropriate amount

Scallions

　　Ginger Appropriate amount

Old soy sauce

　　Corn starch Appropriate amount Pearl rice dumplings preparation steps:

1. First, chop the meat into meat paste, using 7 parts lean meat

and 3 parts fatty meat is preferable.Hand-chopping is recommended as it provides better texture. 2. Chop the scallions and ginger finely. There are lotus roots available in this season.

If no lotus root, use your preferred ingredient

such as tofu skin, but not too much.3. Mix the meat paste with the lotus root, scallions, ginger,starch, egg white, salt, and sesame oil or vegetable oil, mix in a clockwise direction until smooth.4. Soak the rice dumplings for at least 6 hours before use.Shape the meat into balls, you can also coat them with bread crumbs or beaten egg(s).

Then dip them in the soaked rice dumplings.

5. Steam in a water-boiled pot for about 25 minutes. Tips:1. The rice dumplings must be pre-soaked for over 6 hours. 2. It's best to manually chop the meat.3. You can use lotus root or other ingredients,，or none if you prefer, but it may be greasy. 4. Add a small amount of starch to the meat paste, not too much.5. For better appearance after steaming, add some old soy sauce.

6. Use sesame oil or vegetable oil while mixing the meat,only a little is needed. 7. Mix in 1 egg white with the meat paste.

No water needs to be added to the meat filling.

Rice flour must be soaked in advance. For more than 6 hours.

Mince meat should ideally be homemade.

Additional ingredients can include lotus root or whatever you like. But you can leave it out, making it a bit greasy though.

Mince meat should have an appropriate amount of starch added, but not too much.

Add some dark soy sauce to the mince meat for better appearance after steaming.

A small amount of cooking oil or sesame oil can be used when mixing the mince meat.

Add one egg white to the mince meat for mixing. Mince meat does not need water.
