Golden Sand Braised Duck Paws

Ingredients
Frog legs 500g
Green chili pepper 1 piece
Red chili pepper 1 piece
Garlic 3 cloves
Ginger 3 slices
Chili peppers Soy sauce 1 tablespoon
Soy sauce 2 tablespoons Cooking wine 2 tablespoons
Sichuan peppercorns 16 pieces
Duck feet Appropriate amount of oil
Salt to taste
Preserved flavoring to taste
Without-flavor seasonings 500g
Ginger to taste
Rock sugar to taste
Prepare the ingredients for the spicy and numbing duck feet: preserved flavoring, ginger, five-spice.
Clean the duck feet and trim off the front part of the claws with scissors.
Boil the cleaned duck feet, then drain and dry them.
Add water to a pot, and add the prepared preserved flavoring and five-spice.

Add some of the prepared broth to the sugary mixture when it reaches a certain consistency. Combine the sugary liquid and the broth in another pot and add the prepared frog legs. Add more oil, ginger slices, and a bit of salt.
Stir evenly and simmer over low heat for a long time.
After about an hour, turn off the fire and remove the cooked duck feet, then serve them on a plate.
Tips
1. When stir-frying sugar, remember to cover the pot to prevent splashing of oil or water that might injure you.2. Rock sugar is used for coloring; it can be replaced with sugar or soy sauce, but the color won't look as appealing. 3. Do not discard the broth; filter and store in the refrigerator for later use—this becomes old broth.
