Steps for Home-style Slow-cooked Rural Chicken

1. Heat oil in a pot, add scallions, ginger, garlic, star anise, and chili peppers to fry until fragrant

2. Add the washed old hens, then add soysauce and stir-fry continuously

3. Add a little water to the pot, do not let it cover the meat. Cover the pot and simmer for a while

4. After Chicken becomes tender, transfer the chicken and soup to a pressure cooker

5. Cover the pressure cooker and cook for 25 minutes

6. Serve once opened

Tips

The old hen must be fried in a regular pot first to release its fragrance before transferring it to a pressure cooker.
Since the meat of the old hen is quite thick, it is difficult to cook thoroughly in a regular pot, so it should stay in the pressure cooker for longer to become softer.
