1. Sour Chili Peppers Cut into segments, with sour chili peppers Ginger Slice thinly,Bitter Melon Cut into segments for later use

2. Pig Intestines Wash thoroughly and cut into segments for later use

3. Heat the wok with cold oil, add star anise and fry over low heat until fragrant. Then add sour chili peppers and ginger, stir-fry to bring out flavor, then add bitter melon and stir-fry until soft. Add Pig intestines, as well as cooking wine, oyster sauce, salt, and sugar, cook quickly over high heat until the sauce thickens, then serve.
- Tips

1. If there are no sour chili peppers or pickled ginger, you can also marinate the chili peppers and ginger with salt to release the water for 2 hours, then add white vinegar for use.
2. It's best to buy pre-cooked pig intestines from a supermarket; they are easier to cook through.
