Orange Juice Fish Cubes

Ingredients
One large fresh orange
Fish fillets, cut into pieces
An egg Beaten and broken
All-purpose flour+ Cornstarch in appropriate amount (ratio 1:1)
A small spoon of maple syrup
Appropriate salt
Black pepper Appropriate
Orange juice Steps for preparing fish pieces:
1. Mix the beaten egg with maple syrup (or honey, or sugar) 1 small spoon, appropriate salt, and black pepper; then marinate the fish pieces for five minutes;honey or sugar 2. While marinating the fish, squeeze out the orange juice by scooping out the flesh of the orange;
3. Coat the fish pieces evenly with a mixture of flour and cornstarch (ratio 1:1);
4. Heat an appropriate amount of oil in a pan until it is 7-8 degrees hot, then fry the fish pieces until golden brown;
5. In another pot, add orange juice and 2 spoons of sugar; let the sugar dissolve, then add the fish pieces and stir to ensure they are fully submerged in the orange juice;
6. Thicken the sauce with a slurry (reduce heat before adding the slurry to prevent burning);

1: The ratio of flour to cornstarch for coating should be 1:1, as this will result in a good appearance and texture when fried;
2: Use a proper "tool" for squeezing orange flesh if available; otherwise, wrap the flesh in a piece of gauze and squeeze it hard;
3: Reduce heat before thickening to ensure the orange juice can better blend with the fish pieces.
