Fish Bean Flower

Ingredients

Fish meat 300g

  Egg 1 piece

  Chinese spinach 100g

Fish rib 1 piece

  Lean meat As needed

  Green peas 1 tablespoon

Cornstarch 2 tablespoons

Salt as needed

  Ginger 2 slices

  Chicken essence As needed

Steps for making fish tofu flower

1. Cut the fish rib into large pieces and put them in a pot, add water to simmer into fish stock.Fish soup I feared the smelliness so I added several slices of ginger later.

2. This is the fish stock after it has been simmered.

3. While simmering the fish stock, remove the bones and then mince the fish meat into paste.

4. Mix the minced fish meat with salt and chicken essence; then add two tablespoons of fish stock to stir and scatter;Lean meat cut into small cubes, mix with a little salt, starch, and cooking wine. Cornstarch mixed with a little water. Beat the egg white until foamy.

5. Pour the minced fish meat and water-starch mixture into the egg white and stir to form a paste.

6. Blanch amaranth leaves.

7. Place them at the bottom of the soup bowl.

8. Filter the fish stock through a strainer to remove bones and fish meat, discard the solids. Add green peas and salt, bring to a boil.

9. Reduce heat, slowly pour the fish paste into the pot; do not stir, cover and cook for about 3-5 minutes.

10. When the fish paste is slightly set, gently scrape it off the bottom of the pot with a spatula to prevent sticking or burning, then add the lean meat cubes, cover and cook for another 5 minutes. Use a spatula to slice the fish paste into small pieces until fully cooked.
