Sugar-braised pork knuckles Ingredients Introduction
Pork foreleg (1 piece)
Steps for making sugar-braised pork knuckles:
1. Choose the front part of the pork leg, wash it and put it in cold water to boil; then rinse it clean with warm water.

2. Carefully remove all hair using tweezers, and dry it thoroughly with kitchen paper.

3. Rub a layer of old soy sauce evenly on the skin and let it dry.

4. Fry the pork leg in hot oil over low heat, cover the pot to prevent splashing that could cause burns.

5. Prepare seasonings and pack them into a spice bag.

6. In another pan, add a little water and an equal amount of oil; then add cane sugar to caramelize.

7. Stir continuously until it turns brown.

8. Quickly pour in boiling water while being careful to avoid splashing. The caramelization is done, turn off the heat and set aside.

9. In a separate stew pot, lay down ginger at the bottom.

10. Place the fried pork knuckles in the pot, add sugar, old soy sauce, soy sauce, and cooking wine.

11. Add the spice bag and the caramelized syrup; fill with water halfway covering the pork knuckles. Large fire starts to cook it; cover and reduce heat for two hours of slow cooking, turning the pork knuckles over once during this time. After two hours, the pork knuckles are almost tender. Add an appropriate amount of salt for seasoning, then quickly thicken the sauce with high heat.

12. Do not let all the soup evaporate; remove the ginger and spice bag, keeping some liquid in the pot to serve with the pork knuckles.

13. Steam the dish in a steamer pot over high heat for half an hour; this makes the skin even more tender.Steam pot

14. After steaming, drain the soup and thicken it if necessary.

15. Use lettuce leaves to line a serving plate.

16. Evenly pour the sauce over the pork knuckles on the plate.

17. It's ready to be served.
