Home-style Steamed Matcha Pudding Recipe

Steps

. Place the sugar and 2 tablespoons of water in a pot, stir slightly, turn on the electromagnetic stove, and cook with "even fire" mode at 600W.

. Once the caramel reaches your desired color, turn off the heat, quickly add 2 tablespoons of hot water, shake the pot front to back to mix well, and pour it into a mold while it's still hot.

Add matcha powder with 50ml milk and stir evenly with a tea strainer, set aside.

Beat the eggs without whipping them up.

Milk with fine sugar, cook on "even fire" at 400W until the sugar is fully dissolved and the milk slightly boiling. Turn off the heat after that.

. Gradually add to the egg mixture while stirring continuously.

. Then add the matcha liquid, mix thoroughly.

. Strain the mixed pudding liquid through a sieve.

. Pour the matcha pudding liquid into the mold and place it in a steamer basket.

Steam for 6-7 minutes. Immediately remove from heat when done and let it cool down.. Once the matcha pudding has cooled, refrigerate for about 4 hours before removing from the mold to serve.

. Insert a demolding knife between the pudding and the mold, circle around the edge of the mold, gently shake the mold to allow air into the space between the pudding and the mold.

Place a plate over the mold, press down on the mold, then flip it over so that the pudding is on the plate. Lightly tap the mold to release any excess liquid. You can addadzuki beans together for extra flavor.. Tip 1: The degree of caramelization needs to be controlled by yourself, as it greatly affects the taste of the pudding.
. Try a few times and find your favorite level of caramelization.
. Tip 2: I used a Midea electromagnetic stove. Please adjust according to your own equipment's mode.. Tip 3: When adding hot water at the end to make caramel, it may splash, so be cautious for safety reasons.
