Recommended New Year's Eve Delicacy: Winter Melon Tofu with Red Wine Gravy

Winter melon:500 grams, Tofu 450 grams, Mushrooms 3 pieces, red chili 1 piece, green chili 1 piece, Sausage meat Approximately 75 grams, Ginger A pinch of ginger slices, 2 green onions Marinade: Oyster sauce 1 tablespoon, seafood sauce 1 tablespoon,
Dark soy sauce 1 tablespoon, salt 1/3 teaspoon, sugar 1/3 teaspoon, sesame oil 1 tablespoon, Cornstarch 1 tablespoon, red wine 2 tablespoons, water 1 cup. Procedure: First, rehydrate the mushrooms overnight, and when cooking, remove them and cut into pieces; reserve about 1 cup of the liquid used to soak the mushrooms. Also, prepare the sausages, red chili, and green onions by cutting them into pieces;
Second, cut the tofu into small pieces, fry both sides until golden yellow, then set aside. Reserve some of the oil in the pan.
Third, add a pinch of ginger slices and stir-fry winter melon until it is just tender; remove from the pot;Fourth, prepare the sauce by mixing oyster sauce 1 tablespoon, seafood sauce 1 tablespoon, dark soy sauce 1 tablespoon, salt 1/3 teaspoon, sugar 1/3 teaspoon, sesame oil 1 tablespoon, cornstarch 1 tablespoon, red wine 2 tablespoons, and about 1 cup of the reserved mushroom liquid; mix well; Fifth, turn the heat to medium. Add the sausage pieces;
Sixth, stir-fry the sausage until it releases its fat; pour out the oil.
Seventh, add this sauce into the pan along with half of the red and green chili slices and half of the mushroom pieces, stirring briefly;
Eighth, add the winter melon and tofu. Stir well to combine before serving. Plate the dishes first, then pour the sauce over them, garnish with remaining chilies, and you are done.

Tips:
Adding a bit of red wine to the sauce can enhance its aroma; using oyster sauce and seafood sauce increases the dish's freshness.Add pepper, mushroom and half of the scallion, stir a few times; 8th step, pour in winter melon and tofu, flip evenly until done;
9th step, first put the vegetables on the plate, then pour the sauce from the pan on top, sprinkle with scallions, and it's finished.
