Homemade Peanut Cranberry Candy Recipe


It's the Christmas and New Year season again! Say goodbye to this year, and welcome a new one! Peanuts candies such as taffy seem still lingering on the palate from childhood! Back then, a penny could buy one piece, two for three pennies. Often buying two pieces from the small convenience store was one of the happiest things in childhood.

Nowadays, we live in a honey pot every day and candies are no longer a luxury. Making candy by hand with more ingredients is surely something that skillful cooks would love! Making sugar can be difficult, but to satisfy my desire for it, why not use marshmallows instead? This is easier. Try finding the feeling of making candy. In the future, you can make your own taffy by boiling sugar.

This recipe for marshmallow taffy referenced Yangyang's bright one. I replaced some of the peanuts with mixed berries, adding more flavor variety to the taste. The marshmallows used are the most praised "Rocky Mountain" from the market,milk powder is Nestle's. This taffy is not crispy and crunchy. Don't worry about hurting your teeth or cheeks. The taste is delicious, even my mother couldn't resist eating one piece. I wasn't idle either; I ate four pieces before I stopped!

Last year when making taffy, without a mold, I simply flattened the sugar mass in an ungreased baking tray, but the thickness and shape of the resulting taffy weren't ideal. This year is much better with the Fabeike Toffee Set and its mold; now making taffy is easier and neater.


[Marshmallow Cranberry Toffee]
Ingredients: 270 grams of marshmallows,butter 70 grams, 300 grams of shelled peanuts, 60 grams of cranberries, 200 grams of Nestle milk powder.
Preparation Process:
All ingredients for a group photo;
Spread the peanuts evenly on the baking tray and bake in the oven at middle rack, 150 degrees Celsius for 15 minutes; no need to preheat the oven before putting it in.While roasting the peanuts, process other ingredients: cut up the cranberries. Cut the marshmallows into small pieces with scissors.
After roasting, peel and crush the peanuts, don't make them too fine, just keep them in small pieces.
Place the butter in a non-stick frying pan on low heat until melted.
Pour the marshmallows into the butter and stir continuously with a spatula.

Continue stirring until the marshmallows completely melt and mix well with the butter.
Add the milk powder to the pot;
Mix evenly, ensuring no dry powder remains.
Turn off the heat; add peanut pieces and cranberry pieces into the pot and slightly mix them using a spatula.

Mix evenly until there is no dry powder.
Prepare kneading mats on the countertop. If not available, use a high-temperature resistant cling film to avoid direct contact with the candy mass while maintaining hygiene;
Knead the candy ingredients into a firm ball using the mat as mittens;Place the prepared candy mixture in the Fabeike Toffee mold and press flat with the provided small pad. Use the accompanying rolling pin to flatten not just the center but also the edges of the candy mass.

Let it cool at room temperature.
Remove the candy mass from the mold onto a cutting board;Use Fabeike's measuring ruler and sharp knife to cut the candy into uniform strips;

Then, further cut these strips into smaller pieces;
Wrap them in your favorite paper; if you're particular, wrap them with rice paper before putting on the candy paper.

Tips:
1. Stir continuously over low heat while cooking;2. After mixing milk powder and butter sugar mixture, turn off the heat before adding peanuts and cranberries; 3. Knead the dough repeatedly using a mat to ensure cleanliness and prevent burning; this also makes the dough dense;

4. This recipe's candy is not crunchy but can be left to cool completely before cutting into pieces.
If your recipe results in crunchy candy, cut it when slightly warm for better shape.
5. Roasting peanuts in the oven ensures even heat distribution and a delicious taste; alternatively, use a frying pan over low heat with constant stirring to prevent burning.
Fold and knead the sugar dough repeatedly on a floured surface, ensuring it is clean and not hot while making it dense.
This recipe's sugar does not become brittle hard, so it can be cooled completely before cutting into blocks. If your recipe results in brittle hard sugar, cut it when it is warm but still pliable for better shape.
Bake peanuts evenly in the oven to prevent burning and ensure a delicious flavor. You can also roast peanuts in a pan on low heat, constantly stirring to avoid burning.
