Homely Method for Making Pig Offal Congee


Cantonese "char siu baau" and "zhu xiaoshui" refer to pig offal.The ingredients include organs such as stomach, liver, waist, and intestines. Boil the old-fire white rice porridge over high heat.

Reduce to medium heat and cook until thick, skimming off any white foam floating on the surface with a small spoon.

Add ginger strips, stir evenly.

Place slices of lean meat into the porridge first.

Then place the liver slices on top.

When the lean meat slices and liver start to firm up, season with salt, sugar, and chicken essence. Sprinkle with chopped green onion, stir evenly, then prepare to serve in bowls.
