Homestyle Recipe for Salted Pork Stir-fried with Kale in Wok


Organic Broccoli, is best when quickly stir-fried and paired with Salt-cured meat to create a dry pot dish, offering rich textures and a savory-spicy taste. The salt-cured meat is homemade, leaving only the fattier parts at the end, which are then cooked with vegetables to blend flavors, making each bite tempting as an accompaniment.
Ingredients Main ingredients: cauliflower 400g, salted meat 200g, salt 2g, Sichuan pepper powder as needed, rice wine 15g, green onions as needed,Ginger 8g Chili pepper appropriate amount
Steps

Prepare the broccoli and salt-cured meat

Wash the salt-cured meat, then boil it in cold water for a few minutes before simmering for 10 more after it comes to a boil.

Wash the broccoli thoroughly and cut into small florets; slice the salt-cured meat and wash again.

Prepare seasonings (spicy powder, dried chili peppers, chopped, ginger slices, garlic slices, cooking wine)

Heat an uncoated pan, place the slices of salt-cured meat evenly on the bottom, then gently fry over low heat to extract oil.

Add ginger and garlic slices; stir-fry until fragrant. Switch to high heat.

Cook the cooking wine

Stir in the broccoli continuously until it is cooked through.

Stir in the spicy powder evenly.

Stir in the dried chili peppers evenly.

Taste and add salt as needed, then stir in chopped after mixing well before turning off the heat to remove from the stove.

Garnish with chopped before serving.
Tips
1. The salinity of each household's salt-cured meat can vary; if it is too salty, soak it in water to reduce some of the saltiness for better taste.
2. The spicy powder I used already contains salt, so adjust according to your personal preference.
