Home-style Stir-Fried Vegetables with Green Curry Sauce


Do you know how many people are like me, craving something heavy after eating too much light food?
Ingredients: Main ingredients:
Green peas 150g,Mango 1 piece,Cashews 50g,Yam 2 pieces,Coconut 1 piece,Tofu 1 block, 10 pieces of kale, 4 tablespoons of green curry paste, 2 stalks of lemongrass, a little bit of lemon zest, 1 lemon, some basil leaves, red chili pepper , 1 piece, 1 can of coconut milk, 2 tablespoons of fish sauce, 3g bag of green vegetable powder
Steps:

1. Prepare the ingredients (lemongrass, lemon zest, yam, mango, tofu)

2. Heat oil in a pot and add green curry paste, lemongrass, basil leaves, stir-fry for one minute until fragrant.

3. Add peas, cashews, yam pieces, stir-fry for about three minutes.

4. Add one can of coconut milk, coconut water, coconut meat, two tablespoons of fish sauce, a few basil leaves, and a bag of green vegetable powder, simmer until the ingredients are soft.

5. Add tofu, mango, and kale leaves, continue simmering for a few more minutes.

6. Remove from heat, serve in a coconut shell, garnish with red chili pepper and basil leaves, your delicious green curry is ready!!
Tips:
*Vegans can substitute fish sauce with soy sauce.Soy sauce
