Steps:
1. Chop the pig's trotter into pieces and set aside (Should we choose front or rear trotters?

The front trotter has more meat with fewer bones;while the back trotter is leaner with more bones. If you want to eat the meat, consider the front trotter;if it's for making soup, then definitely choose a better quality rear trotter!)Here I chose the front trotter as per an old saying: "Front eat, back view". 3. Halve one piece of ginger and flatten it for later use.

4. In a clean pot, add cold water and place the pig's trotter, ginger, 5 grams of cooking wine.

5. Bring to a boil over high heat until foamy, then remove the pig's trotters and use a knife to scrape off any hair on the skin.

(Scraping is easier after boiling as the skin becomes looser).After scraping, wash with warm water, dry thoroughly, and set aside. 6. Cut the remaining ginger into slices for later use.7. Rinse the peanuts and set them aside.8. Wash the spring onions and set them aside.

9. In a clean pot, heat some oil, then add broken rock sugar (use a rolling pin to break the large chunks of rock sugar).

10. Stir until caramelized.

11. Add the pig's trotters and stir-fry evenly.

12. Add ginger slices, peanuts, spring onions, soy sauce, dark soy sauce, and cooking wine; stir-fry together.

13. Pour in enough boiling water to just cover the pig's trotters.

14. Bring to a boil over high heat, then reduce to low heat with the lid on and simmer.

15. Simmer for about 30 minutes until the pig's trotters are almost tender; add salt and continue cooking over high heat to thicken the sauce.

16. Be sure not to burn the sauce when thickening it.

Once the sauce is fully reduced, the dish can be removed from the pot.

17. The thickening process requires careful attention; do not let the sauce dry out completely.

When the sauce has been sufficiently thickened, the dish is ready to serve!
