A bowl of soup and a pot of dry string bean rib stewed rice.Ingredients: 300 grams of rice, 150 grams of purple sticky rice,300 grams of spare ribs, 1/3 carrot (150 grams), 60 grams of dried string beans, half a green onion, 3 ginger slices, 3 star anise,soy sauce 1 tablespoon, light soy sauce 1 teaspoon, sugar 1 teaspoon, Sichuan pepper 1/2 teaspoon, rice wine 1 tablespoon, sesame oil 1 teaspoon. 1. Soak the dried string beans in water overnight.
2. Cut the carrot into small pieces slightly smaller thanrice
.3. Finely chop the green onion, slice the ginger. 4. Heat oil (1 tablespoon) in a pan and stir-fry the chopped green onion, ginger slices, and star anise until fragrant.5. Add the spare ribs and cook until they tighten.(The spare ribs do not need to be blanched; I soaked them in water for 2-3 hours and changed the water twice during this time)
6. Add the carrot pieces and dried string beans, stir-fry together.(If your dried string beans are long, cut them into about 3 cm segments)

7. Add soy sauce, light soy sauce, sugar, salt, rice wine, Sichuan pepper, and stir-fry well.8. Add the purple sticky rice and regular rice, wash and drain off any excess water.
9. Transfer all the cooked ingredients into the pressure cooker, add enough water to cover by about 1 cm.10. Press for 15 minutes.11. After opening, drizzle with sesame oil and mix well!
Tip:When stir-frying at the start, don't use too much oil, just about 1 tablespoon is enough; otherwise, the ribs will release more fat when steaming, making it a bit greasy. Tips for pairing ingredients in dry string bean and rib stewed rice:

9. The prepared ingredients should be stir-fried.All the cooked ingredients should be placed in a pressure cooker with an appropriate amount of water, ensuring the water level is about 1 cm higher than the ingredients. Press for 15 minutes. After opening, add some sesame oil and mix well!


Tip:
When stir-frying at the beginning, do not use too much oil; just about 1 tablespoon will suffice,otherwise when simmering the ribs later, they may release more oil, making them feel a bit greasy to eat.
