Rice is the classic staple food for Chinese people, from our earliest memories, rice has been inseparable from us. Every meal at the table features it, and if we leave rice out, even the most delicious dishes would feel incomplete.
Xinjiang, in my heart, is always a dream-like place. My family always wants to drive there for Xinjiang and Tibet, but I am still hesitating. Sigh, people who think too much can't handle it.
Recently, Xinjiang restaurants have become very popular in Wuhan with many opening up. We've gone to five or six different ones already, each offering the same dishes, such as grilled lamb ribs.Spicy chicken dish, all of which taste great, definitely a paradise for meat lovers.
Electric rice cooker slow-cooked exotic delicacies---hand-pulled mutton rice.
Rice: 135 grams mutton ribs, 235 grams lamb tenderloin, 160 grams of rice.Vegetables: onion
120 grams,tomato 80 grams, carrot 100 grams, potato 120 grams. Marinade: 3 grams salt, 4 grams of cumin seeds,black pepper 1 gram,
egg white 1 piece. Ingredients:butter 30 grams,

Rinse the lamb and soak in clean water for an hour to remove blood water; add a few Sichuan pepper slices and ginger pieces with cooking wine for better flavor.2. 12. Fry the lamb pieces with the fat until they turn color; remove from heat after frying.

13. Melt butter in a pan.
14. Add onion first, and when fragrant, add tomatoes, potatoes, and carrots, stir-frying them together.

15. Add the lamb pieces and season with salt to taste.

rice cooker

When stir-frying, it might seem like there are too many ingredients, but after cooking the rice, you can reduce them by about one-third; you can use lamb ribs or lamb tenderloin exclusively.
2. The amount of salt in the above list may be insufficient; mix well and taste before adding more according to your preference, I added another 3 grams at last.

4. The number of onions and tomatoes added when simmering lamb bones is not specified here, just a few pieces are enough.
5. We don't usually like raisins much, so we only used a little bit.
6. While I had made hand-pulled mutton rice before, using the lamb bone to make broth and cooking the rice with that broth is inspired by an Xinjiang friend's method; it makes for a more authentic taste.

Rice and

and lamb can also be eaten together: lamb contains high protein with only half the fat content of pork; it also contains phosphorus, iron, calcium, vitamin B1, vitamin B2, and niacin. It has a warm taste, sweet flavor, and benefits such as replenishing qi and strengthening the middle energizer, treating erectile dysfunction, early ejaculation, postpartum weakness, stomach pain due to coldness, poor appetite, lung weakness with prolonged coughing, or asthma.

Above the ingredient list, there might not be enough salt. After steaming the rice, mix it well and taste it to adjust the salt according to your preference; I added about 3 grams more.

For the bone soup, I didn't specify the amount of tomatoes and onions. A few slices should suffice.
We don't usually like raisins much, so we used a small amount.
