Homemade Teriyaki Chicken Thigh Rice Recipe

Cut three slices of ginger into strips.Arrange the deboned chicken thighs in a flat bowl, pierce them with a fork to create holes. Place the ginger strips at the bottom and top of the chicken thighs.Pour two tablespoons of teriyaki sauce, two tablespoons of light soy sauce, and half a cup of water into the bowl. Add one teaspoon of white sugar for marination. Place it in the refrigerator overnight. Prepare a small bowl with half a cup of water, one tablespoon of oyster sauce, two tablespoons of light soy sauce, one tablespoon of teriyaki sauce, and one tablespoon of honey mixed together to make the teriyaki sauce.Take out a clean flat pan without oil. Place the marinated chicken thighs in it. Invert a portion of rice onto a plate. Sprinkle some fried sesame seeds over the rice, arrange the vegetables and chicken pieces around them. Pour the teriyaki sauce on top of the chicken.

If you don't have Japanese soy sauce, you can use light soy sauce instead but adjust for saltiness as different brands vary in their salt content.

If you don't have mirin, substitute with cooking wine.

Note on ingredient pairing: Black sesame and chicken thighs should not be consumed together; however, eating chicken thighs with lemon enhances appetite.


7 Take a clean small bowl and pour in half a bowl of water, 1 tablespoon of oyster sauce, 2 tablespoons of Japanese light soy sauce, 1 tablespoon of mirin, and 1 tablespoon of honey. Mix them evenly to make teriyaki sauce.

14 Remove the chicken leg chops with a fork, cut them into appropriate sizes.

15 Serve rice in a small bowl, pour it upside down onto a plate.
