Homemade Peanut and Red Date Steamed Pig's Hooves Recipe

Scallions, as needed Method: 1. Wash the pig's feet with warm water and soak them in clean water for 1 hour to remove dirt.
2. Rinse the red dates and peanuts, then soak them in water for 1.5 hours.



3. Prepare the cooking seasonings; finely chopped ingredients should be wrapped in a cloth bag.
4. Place the pig's feet in a stew pot with water, bring to a boil over high heat, add the cooking seasonings except salt, soy sauce, and monosodium glutamate, and let it simmer until the seasoning melts into a juice that better flavors the pig's feet during the stewing process.5. Blanch the pig's feet: Place them in a pot with water and bring to a boil over high heat. Add two tablespoons of wine, do not cover the pot, cook for 3 minutes to remove unpleasant odors, then remove from heat.
6. Remove the hair, use a knife to scrape off its white skin.



7. Rinse and dry the pig's feet; drying is necessary for better coloring and flavoring.8. Take out the orange peel and cinnamon bark from the stew pot; prolonged boiling may cause the juice to become bitter.
9. Place the cleaned and dried pig's feet in a large pot, bring to a boil over high heat, skim off any foam, then reduce to low heat and cook for 40 minutes.
10. To prevent peanuts from turning black when cooked, blanch them first before adding to the stew. Remove the peanuts after boiling and set aside.



11. After 40 minutes of cooking the pig's feet, add the peanuts, bring to a boil again, then reduce to low heat and cook for another 20 minutes.
12. As this batch is too large to consume all at once, do not add salt and other seasonings until you only prepare what you will eat now. Prepare the cooking seasonings as shown in the image.


13. Heat oil in a wok over medium heat, add ginger and scallions, stir-fry until fragrant.
