  Suancaiz Spicy Stir-fried Napa Cabbage

"Suancaiz Spicy Stir-fried Napa Cabbage" is a lightly spicy stir-fry dish."Lightly spicy," means the spiciness of the dish comes from green chili peppers.Green chilies, instead of dried red chili peppers. The difference between them lies in the fact that green chilies carry a fresh taste along with their spiciness, while dried red chili peppers provide a strong spicy flavor. When stir-frying cabbage, it is better to choose green chilies.

Mains and ingredients: pickled mustard greens, hot chili peppers, cabbage

Seasonings: Oil, salt,MSG, oyster sauce

Steps:

1. Wash the green chili peppers and cut them into pieces.

2. Clean the Suancaiz and soak it in water for 10 minutes, then slice it.

3. Cut the Napa cabbage into pieces and soak it in salty water for 20 minutes.

4. Boil water in a pot and blanch the soaked Napa cabbage until cooked.

5. Drain and rinse with cold water, then squeeze out excess moisture and set aside.

6. Heat oil in a pan and stir-fry the green chili peppers.

7. Add the sliced Suancaiz.

8. Stir fry evenly and add an appropriate amount of oyster sauce.

9. Finally, add the blanched Napa cabbage and stir fry.10. Season with a little salt and MSG.

11. Stir-fry until well combined then turn off the heat.

Serve in a dish and it's ready to serve.

Tips:

1. Suancaiz is salty, so soak it for some time to remove excess salt.

2. Blanching Napa cabbage beforehand can speed up the cooking process and give the green chili peppers and Suancaiz a crisp texture.
