Chinese cabbage salted rice recipe


Salted rice is a common dish in the southern part of Taiwan, known as "guzhaweibei". Generally, salted rice includes seafood,dried mushrooms,pork belly, and radish,carrot, and Chinese cabbage (cabbage). The name of the vegetables added determines its name.
Today, I followed a Taiwanese food teaching show to make "cabbage salted rice", which turned out to be very delicious. Try it yourself if you don't believe me.
Ingredients Main Ingredients
short-grain rice 200g, cabbage 500g,shrimp 30g,

first wash the outer leaves of the cabbage and cut them into small pieces, then wash again.

Soak dried shrimp and mushrooms beforehand, slice the mushrooms;the water from soaking dried shrimp and mushrooms is filtered and reserved; use 1.3 times the amount of rice.Cut the fatty meat into thin strips, peel off the outer skin of the red onions, wash them, and chop finely. In a small amount of oil (about 10g), heat cold on low to medium heat. Add chopped red onions and fat strips, slowly cooking out the fat from the meat until the onions turn golden yellow; remove the onions and keep the oil in the pot.

Add mushrooms and shrimp, stir-fry until fragrant.

Then add cabbage and stir-fry until it softens.

Move the cabbage to one side of the pan, then add washed rice and stir-fry briefly.

Note: Rice does not need to be soaked.

Pour in the reserved water from the mushrooms and shrimp (about 1.3 times the amount of rice).
Once the water boils, season with salt. Transfer to an electric pressure cooker or rice cooker and arrange the stir-fried red onions and meat strips on top.

Cook under high pressure for 10 minutes, release pressure, open the lid, and mix well before serving.

Tip

1. Rice does not need to be soaked to maintain its chewiness.
