Braised SeasoningGoose Steps for Homemade Liver:

Ingredients:
1 portion of Chaozhou goose liver, 600 grams, 5 milliliters of sesame oil. Seasoning ①: 1500 milliliters of Chaozhou braising liquid.15 grams of fine salt, 10 milliliters of rose wine,Cilantro 5 grams, 20 grams of garlic meat,Ginger 15 grams, 3 scallions. Seasoning ②: 10 grams of fine salt.65 milliliters of fen ti juice.
Process:
1. Clean the blood and dirt from the goose liver, marinate with Seasoning ② for 30 minutes, then squeeze out the blood water inside, rinse again, and soak in clean water for 30 minutes before use.2. Blanch the goose liver in slightly boiling water, simmer for 5 minutes, remove, and cool by immersing in ice water for 2 minutes. 3. Bring the Chaozhou braising liquid to a boil, add Seasoning ① and cook for 2 minutes, then add the liver and simmer on low heat for 6 minutes. Remove from heat and steep for 20 minutes, then return to low heat and cook for another 20 minutes. Once fully cooked and well-flavored, remove, cool, slice, and serve with the braising liquid and sesame oil.Blood clean well, marinate with seasoning ② for 30 minutes, then squeeze out the inner blood water, rinse again with clean water and soak in it for 30 minutes, ready for use.
2. Put the pate in slightly boiling water to blanch, turn off heat and immerse for 5 minutes, then remove and plunge into ice water for 2 minutes.
3. Boil the Chaozhou preserved salted liquid, add seasoning ① and cook for 2 minutes, put in the intestine, switch to low fire and simmer for 6 minutes, turn off heat and immerse for 20 minutes, then continue cooking on low heat for another 20 minutes until fully cooked and well seasoned. Remove when cooled, slice and serve with the preserved salted liquid and sesame oil.
