Homemade Method for Salted Duck Kidney

Ingredients:

5 large goose kidneys, about 900 grams;Fen ti juice;2500 ml of Chaozhou brine, 5 ml of second-cut distillery alcohol,Cilantro 150 grams, garlic meat 100 grams, 5 ml of sesame oil.

Preparation process:

1. Remove the kidney membrane from the goose kidneys and wash them thoroughly.

2. Put the goose kidneys in boiling water to blanch until half-cooked, then remove and let cool. Use the tip of a small knife to scrape off the fat from the goose kidneys.

3. Bring the brine with the flavoring ingredients to a boil, add the alcohol, cilantro, and garlic meat, then simmer the goose kidneys for 15 minutes (on low heat), turn off the fire and let it steep for another 35 minutes before removing. Once cooled, slice the goose kidneys and serve them on a plate, drizzled with brine sauce and sesame oil. Serve with Fen ti juice.
