How to Make Kimchi with Napa Cabbage

11. Depending on the temperature, it will take about 3 to 7 days for fermentation. Start eating after 3 days; slicing some each day makes great side dishes.

12. You can store in a cool, well-ventilated place or in the refrigerator. I chose the fridge because the room temperature is still around 10 degrees Celsius.

This recipe comes from a friend who works at a Korean restaurant. The apples, pears, and Sprite are used for flavoring and sweetness; using Sprite makes it taste better than water. If you don't like it, add less or omit the Sprite, adjusting according to personal preferences. The taste can vary depending on the sweetness of your fruit. After mixing, you can taste it and add garlic paste or sugar if desired. Garlic and onions are very important, but only a little ginger is needed as Korean cuisine doesn't use much ginger.
