Stir-fried Meat Pieces in Egg Batter Preparation Steps:
1. Peel the garlic and onion, then wash them along with the pork, green pepper,cucumber, ginger together.

2. Cut the pork into small pieces, slice the green peppers, cut the cucumber and garlic into slices, chop the onion, and cut the ginger into strips.

3. Marinate the pork pieces with salt and cooking wine for 10 minutes.

4. Put cornstarch in a bowl.

5. Add half a bowl of water to make a slurry. Let it sit for a while until the starch settles, then pour out the water on top.

6. Pour the settled starch slurry into the marinated pork pieces and mix well by hand. Then drizzle two drops of peanut oil again and mix thoroughly.

7. Heat peanut oil in a pot.

8. Fry the coated pork pieces until they form.

9. Remove them from the heat once formed.

10. Increase the oil temperature, then fry the pork pieces again until golden brown.

11. Drain on a plate and remove excess oil.

12. Quickly blanch the green pepper slices and cucumber in the oil, then remove immediately.

13. Remove any remaining oil from the green pepper slices and cucumber.

14. Mix dark soy sauce, sugar, monosodium glutamate, and 1 tablespoon of water in a bowl to make a seasoning sauce.

15. Discard most of the oil used for frying meat pieces, leaving some residual oil, then sauté onion, garlic, and ginger.

16. Add the fried pork pieces, green pepper, and cucumber back into the pot.

17. Pour in the prepared seasoning sauce and stir to combine.

18. Serve in a dish.

Allow time for the starch slurry to settle after mixing water, then pour off the top water. This method ensures an easy-to-handle consistency without worrying about the thickness of the slurry.
