How to Make Homemade Chestnut Filling


Ingredients Introduction
Hazelnuts 500g glutinous rice balls, 60g rock sugar, 30g vegetable oil
Steps to make homemade sweetened mashed hazelnuts:

1. Peel and wash the hazelnuts

2. Place in a pressure cooker with twice as much water as the hazelnuts, add rock sugar, and bring to a boil over high heat 3. Once steam rises, reduce heat and cook for 20 minutes until the hazelnuts are soft and tender 4. Transfer the cooked hazelnuts and sugared liquid into a blender and blend into smooth mashed hazelnuts (blend slightly chunky if preferred for texture)

5. Pour the blended hazelnuts into an unstick pan and cook over low heat, adding vegetable oil in portions 6. Cook until it dries out slightly 7. Remove from heat and let cool; can be used as filling for mooncakes or pastries
